Holly berry brandy

Holly berry (Iles aquifolium)
Produced by a shrub with shiny, thorny leaves, holly berries are very rare, and therefore inevitably more expensive than other berries, with one of the lowest yields (tedious picking to obtain the hundred or so kilos of berries needed to make a few litres of brandy). The Holly is very present in the Vosges mountains, where the fruit is harvested. It should be noted that only the female trees produce these small berries which turn red when they reach maturity in winter, the harvesting period, before being macerated and distilled.

Holly berry brandy is a perfect match for smoked fish and lemon sorbet.
